Fresh Mozzarella

This appetizer is called Fresh Mozzarella. It is hand pulled mozzarella.  It has a creamy center. The cheese is encrusted in pistachios, fresh ground black pepper, and cold-pressed extra virgin olive oil.  It is laid on a bed of arugula. It is served with Michigan Cherries.  The cherries are soaked in white balsamic vinegar.  They are sliced thin.  Thick sliced Semolina Bread, lightly toasted is served with this dish.  The cheese and cherries spread on the bread is delicious!


When I recreated this recipe, I did not make my own mozzarella like the restaurant did. However, I did use fresh mozzarella. It did not have the same taste, but it was similar. Everything else tasted the same. I first tasted this appetizer in Naples, Florida over the summer. 

This appetizer was truly amazing. The cherries melted in your mouth. It was the perfect combination between sweet and savory. The perfect combination of spices, vinegars, and oils.
